Number of Servings: 4

Ingredients

    1 lb Pork, fresh, loin, fat removed and ground or chopped into small pieces
    1/8 teaspoon Pepper, black, .125 tbsp
    1 can (14.5 oz) Hunt's Diced Tomatoes with Green Pepper, Celery and Onions
    1 can Hunt's Tomato Sauce, (8 oz - nutritional info uses no salt added version)
    1 cup Green Peppers (bell peppers) cut into strips
    1 medium Onions, raw, 1 medium diced
    1/2 cup Hulled Barley, Berry Farms

Directions

Brown pork in skillet with pepper
Combine tomatoes with their liquid and the sauce; add mixture to the barley in same skillet. Top with pork, bell peppers and onions. Bring to a boil. Reduce heat to low; cover skillet with lid.
Cook 20 to 25 minutes, or until barley is tender.

Watch carefully for last half of cooking. It may need more water (and/or more time) to get the barley tender if using hulled barley. There should be enough liquid and time here for pearled barley.
