Ingredients

6 roma tomatos
1/2 a large onion (1cup)
4 garlic cloves
1 Chile Californis (rinsed and seeds removed)
1 Pasilla Chile (rinsed and seeds removed)
1/4 cup toasted sesame seeds
1/4 cup toasted pumpkin seeds
2 tsp salt or to taste
1 tsbp Oregano
1 lb of beef shank
1.5 of beef chuck
1/2 cup cilantro
1/2 chopped onion
Directions
Blend these ingridients:

4 garlic cloves
1 Chile Californis (rinsed and seeds removed)
1 Pasilla Chile (rinsed and seeds removed)
1/4 cup toasted sesame seeds
1/4 cup toasted pumpkin seeds
2 tsp salt or to taste
1 tsbp Oregano
Belnd and set aside.
Brown 1 lb of beef shank and 1.5 of beef chuck until brown but not fully cooked.
Put the beef in a large soup pot and pour on sauce add 2 whole bay leaves and 3 whole cloves on top and cook on medium heat for 2 hours.
Try to remove cloves and bay leaves when ready to serve.
Top with fresh onion cilantro and lime juice. Best served over white rice or salad greens.
