Introduction

This is a great way to use up your extra zucchini & yellow squash from the garden. It can be used as a side, over pasta or you can add fish, chicken or seafood to the top & let poach til' done. Ingredients

    Ingredients:
    Zucchini, 4 cup, sliced (remove)
    *Summer Squash, 2 cup, sliced (remove)
    Canned Tomatoes, 6 cup (remove)
    Onions, raw, 1 cup, chopped (remove)
    Garlic, 3 cloves (remove)
    Salt, .50 tsp (remove)
    Pepper, black, .50 tsp (remove)
    Dill weed, dried, 1.5 tbsp (remove)
    Kraft Reduced Fat Parmesan Cheese (grated) -(2 tsp), 24 tsp (remove)
    olive oil, 2 teaspoons

Directions

Wash & slice squash & zucchini about 1/2 inch thick. Do not peel it. Set aside. Chop onions and garlic. Saute in 2 teaspoons olive oil. Add the zucchini & squash, continue sauteeing til just about tender, but not soft. Add Tomatoes dill & parmesan cheese. Continue cooking til' zucchini & squash are tender. Each serving is about 1 1/2 cups.
