Ingredients

    Grilled Chicken
    4 boneless skinless chicken breasts
    1 can Coconut milk (I use lite)
    1 package GrillMates Hawiian Luau Marinade
    2 TBSP garlic powder

    Grilled Pineapple
    Fresh pineapple, peeled cored sliced in to approx 8-10 slices
    1 can coconut milk (lite)
    2 TBSP cinnamon
    1 TBSP Vanilla
    1 TBSP Butter flavoring (WIlton)

Directions

For the Grilled Chicken

Combine the coconut milk and seasonings in a dish large enough to marinate the chicken breasts in. Add chicken. Marinate at least 12 hours turning ever 3-4 hours in fridge. 24 hours is best.
Remove chicken from marinade, discard remainder. Place on medium hot grill. Cook thoroughly until internal temperature reaches 165. DO NOT flip/press/poke the chicken as it will cause it to dry out. Grilled chicken should be flipped 2 times only, cooking 5-7 minutes on each side.
Remove from heat and place on a platter, let rest for 4-5 minutes.

For the Grilled Pineapple:

In a dish combine all ingredients together. Place pineapple slices in hte milk mixture and let marinate in the refrigerator for at least 1 hour. The longer the better though.
As soon as chicken comes off the grill place pineapple rings over medium high flame and grill for approximately 2-3 minutes per side.
Remove and add to the chicken platter.

Serve this meal alongside Jasmine rice and fresh tomato slices.

    The chicken was definitely juicy and tender. The only thing I think there was a bit too much garlic. I am going to cut the amount to 1 TBSP. I didn't make the pineapples this time. All in all this is a good recipe and definitely one that I will be making again for my family. - 5/17/11
