Ingredients

    750g cubed lamb
    1/4 teaspoon black pepper
    2 medium onions, thickly sliced
    2 cloves garlic, crushed
    2 tablespoons moroccan seasoning (salt-free, I like Alexandra's)
    2 carrots, diced
    2 zucchini, thickly sliced
    420g can of chickpeas, drained and rinsed
    125g dried figs - chopped.
    2 tablespoons tomato paste
    2 tablespoons chopped fresh coriander (cilantro)
    2 tablespoons chopped italian parsley

Directions

1. Place lamb, pepper, onions, garlic, moroccan seasoning and cinnamon stick in a large saucepan. Add 4 cups of water (or enough to cover the lamb) and bring to the boil. Cover and simmer gently for 1 hour.
2. Add carrots, zucchini, chickpeas and figs. Cover and simmer another 30 minutes.
3. Stir in tomato paste and herbs, simmer uncovered 5 minutes

Serve with vegetables or salad, and steamed couscous or pita bread.

Makes 6 servings of at least a cup - exact size depends on how big your vegetables are and how much water you use.
