Ingredients

1 tbs olive oil
1 medium onion, diced
1 large jalapeno, diced
1 tbs. minced garlic
2 boneless skinless chicken breasts, cubed
2 tbs ground cumin
1 tbs chili powder
1/2 tsp ground cayenne pepper
2 14.5 oz cans diced tomatoes w/jalapenos
2 cups fat free low-sodium chicken broth
3 bay leaves
Directions
Heat olive oil in stock pot.
Dice onion and jalapeno and saute in olive oil until slightly tender. Add the garlic and cubed chicken breasts. Cook until the chicken is no longer pink.
Add the cumin, chili powder and cayenne pepper and stir in until chicken is well coated.
Stir in the tomatoes, corn and black beans. Stir in the chicken broth to the desired consistency. Bring to a boil. Add the bay leaves and simmer 30 minutes.
