Ingredients

    1 tbsp extra virgin olive oil
    1 large onion cut in rings
    1 carrot diced
    15 spinach leaves thorn
    2 tbsp of Knorr veggetable or beef soup mix
    1 1/2 cup of water
    1fl oz Whisky scotch (optional)

    Garnish
    1 thin Slice of whole wheat bread
    2 oz of gratted swiss cheese

Directions

cook the onion and carrot in the olive oil.
When softten, and the spinnach ant soup mix.
Stir and cook for 2 min
And water (and scotch if wanted) and simmer for 20 min .

Pour in 2 heat-resitant bowls for appittizer Put the piece of breadon the soup ant cover with the cheese

Broil until golden and enjoy.
