Introduction
Still a little heavy, but the 1% milk and vinegar as a substitute for buttermilk lightens it up a lot. Ingredients

1 Cup 1% milk
1 Tbsp. Vinegar
1 Cup Cornmeal
1/2 Cup Butter
1 Cup Flour
3/4 Cup Sugar
0.5 tsp. Baking soda
0.5 tsp salt
2 Eggs
Directions
1. Preheat the Oven to 375F. Grease an 8-inch Square pan. Place 1 tbsp. of vinegar into the 1% milk to curdle it (like buttermilk) for 5 minutes.
2. Melt the butter in the microwave in a microwave safe bowl. When melted, stir in the sugar. Quickly add the eggs beat well until the mixture is blended.
3.Place the baking soda in with the milk and vingear and combine. Stir this mixture in with the eggs, sugar, and butter.
4. Stir in cornmeal, flour, and salt until well blended. You may use a whisk or a hand-held electric beater.
5. Pour batter into the greased pan and place into the Pre-heated oven for 30-40 minutes (35 has been best for me). The bread is done when a toothpick placed in the center comes out clean.
