Introduction

Number of Servings: 10

Ingredients

    1 pound roast beef (eye of round or similar) - chopped
    2 celery stalks - diced fine
    2 carrots - diced fine
    1 onion - diced fine
    1 onion - chopped
    2 potatoes - chopped
    Beef broth - fat free - 12 cups
    Canned diced tomato - 14 flo
    Beef oxo - 1 tsp
    Oregano - 1 tbls
    Thyme - 1 tsp
    Olive oil - 2 tbls
    Garlic diced - 2 tsp
    Hot pepper sauce - 1 tbls (or to taste)
    Salt and Pepper to taste

Directions

Dice celery carrots, and 1 onion fine.
In large pot saute on low with olive oil, about 15 mins.

Chop remaining onion, and potato.
Add to pot, increase heat to med-high.

Add garlic, oregano, thyme and diced roast beef.
Saute 5 mins.

Add all remaining ingredients except barley.
Bring to a simmer, cover reduce heat and simmer 1 hour.

2 hours before serving, add barley.
Continue on simmer stirring occasionally.

Makes 10 2 cup servings
