Introduction

A classic side dish A classic side dish
Number of Servings: 6

Ingredients

1 cup long grain brown rice (or for classic "roni' use 3/4 cup rice and 1/4 cup broken up spaghetti)
    1 tablespoon dry onion
    1 tablespoon dry parsley
    2 beef flavored bouillon cubes
    2 1/2 cups water
    1 Tbsp soy sauce

Tips

Add 1 cup frozen peas about 10 minutes to the end of cooking time.

Directions

To Prepare:

In a 2-quart saucepan combine all ingredients and bring to a boil. Place a lid on the pot. Reduce the heat to the lowest possible flame. Simmer, covered until done or for about 45-50 minutes.

Leftovers can be heated up the next day, by sauteing the cold rice in a little olive oil, like fried rice. Scramble in an egg and serve in bowls. Makes a quick and easy lunch for hungry kids.

I used broth and skipped the bouillon cube, and I used real onion instead of dried. It has less of a packaged overtaste that way. - 10/2/18
