Introduction

Ingredients

6 ounces (3/4 box) of Fiber Gourmet Pasta (I used Rotini)
1 can Dark Red Kidney beans (I used S&W) drained and rinsed
1 cucumber with the peel seeded and cut in small chunks
1 small onion diced
1 11oz can of Mexicorn drained
6 Tbsp of Kraft Light Balsamic Vinaigrette Dressing
Directions
Try cooking the Fiber Gourmet Pasta to the package directions. I like it cooked a little longer. Test for firmness you prefer.
While it is cooking drain and rinse the beans, chop the cucumber and onion, and drain the Mexicorn. Dump everything in a bowl and add the dressing.
When the pasta is to your liking, drain then rinse with cold water to stop the cooking process. Drain well (I wait until it starts looking a little dry) then add to the other ingredients. Mix well and let the flavors mingle in the fridge for a couple hours. You might try adding fresh herbs from your garden. Makes four Large servings with over 19 grams of fiber each!
