Introduction

A crunch, yummy chicken dish for the days I crave Chick-Fil-A or other breaded/fried chicken! In fact, my family likes it so much I get requests for this instead of regular fried chicken..yay! A crunch, yummy chicken dish for the days I crave Chick-Fil-A or other breaded/fried chicken! In fact, my family likes it so much I get requests for this instead of regular fried chicken..yay!
Number of Servings: 2

Ingredients

    2 chicken breasts
    .5 cup Special K crushed
    1 tbsp parmesan cheese
    1 tsp garlic powder
    1 tsp parsley
    1 egg white
    1 tbsp sunflower oil for frying

Directions

Combine dry ingredients in a bowl including crushed Special K and mix. Dip chicken breasts in egg white then dip into the dry mixture and place on a lightly oiled sheet (I used PAM cooking spray) and place in the oven for 10-15 mins at 200C (400F).

Serve with salad, rice, potatoes, etc. YUMMY!

I didn't add any salt or pepper as we try to avoid salt and depending on the cheese you need it might be salty enough. This would be good with light ranch dressing, salsa, low-cal BBQ sauce, etc.

    I omitted the parmesan cheese and it was still very good. Quick and easy. - 11/7/10
