3/4 C zucchini
1 C all purpose flour
1/4 C sugar
1/4 C Splenda powder( or you can use 1/2 C of Splenda mix for baking and omit regular sugar)
2 tsp. baking powder
1 tbsp melted butter
1 egg
1/2 C non fat milk
1/2 tsp salt
1tsp cinnamon
1/2 tsp vanilla extract
Directions
mix all ingredients, pour into greased muffin/cupcake pan or paper liners, bake 375 for 15 minutes makes 12 muffins. Serving size-1 muffin.
