Introduction
This was my attempt at recreating the vegetable fried rice I used to get at Chinese food places... in a healthy way.Nothing is fried, everything is boiled, so this can be done in one pot on the stove.
This recipe can also be adapted for the microwave if you use a microwavable popcorn bowl. I have included the directions below the stove top directions. This was my attempt at recreating the vegetable fried rice I used to get at Chinese food places... in a healthy way.

Ingredients
-
16 oz dry long grain brown rice
1 large green bell pepper, chopped
1 large red bell pepper, chopped
2 medium or large onions, chopped
1 clove garlic, minced
2 tbsp soy sauce
Directions
-Stove Top-
In a large pot, begin cooking rice according to directions on package. Add garlic and soy sauce to water when you add the rice.
In last 10 minutes of boiling, add onions and peppers. Stir regularly.
-Microwave-
In large microwavable bowl (popcorn bowl is ideal), add rice, soy sauce, garlic, and 32 oz water.
Place bowl in microwave on High power for 10 minutes. Water may or may not be boiling, however it will be hot! Stir.
Replace bowl in microwave and place on High power for 10 minutes.
If rice is still quite hard and has no tenderness to outside edges, place back in microwave on High power for an additional 10 minutes.
If rice is para-cooked (outside of grain is soft while inside is still hard), add onion and peppers.
Stir well and place back in microwave on High power for 10 minutes.
Let sit for 5 - 10 minutes to finish cooking.
