Ingredients

    16 oz lean ground beef
    1 cup chopped onion
    2 cups (8 oz) dry whole wheat penne or maccaroni, cooked
    (10 oz) can condensed tomato soup (healthy request)
    (15 oz) can diced tomatoes
    (6 oz) can tomato paste
    1/2 tsp EACH salt & garlic powder
    *1 cup 2% shredded cheddar cheese (optional)

Directions

Fry the meat and drain. Cook the onion while meat is draining. Add everything to the pot of drained macaroni. Stir it up real good and heat through (about 10 minutes). Serve immediately sprinkled with cheese or make ahead and keep the goulash refrigerated in a greased 9 x 13 baking dish. Sprinkle the cheese on top and bake at 400 for about 30 minutes. If it was frozen, cook at 350 for an hour with the top covered with foil. Serves 6.

    This is great - Mine came to 200 calories for 1/6 of recipe (1 cup), with extra lean ground beef and 6oz of Barilla white fiber mini penne in the whole recipe. Very tomato-y! - 12/13/13
