Ingredients

3c whole wheat flour
1/3 c honey
1 TBS salt
1/4 c shortening
2 pkg yeast
2 1/4 c warm water
4c AP flour
1 TBS butter (melted)
1 TBS flax seed (ground)
Directions
Mix whole wheat flour, honey, salt, shortening, and yeast in a large bowl. Add warm water. Beat with mixer 3 min, scraping frequently. Beat on medium speed 1 min, scraping frequently. Stir in 3c AP flour. Turn out dough on lightly floured surface. Knead until smooth (5-10 min), flouring with remaining cup when needed. Place in greased bowl. Turn dough to grease both sides. Cover and let rise in a 200 oven until doubled in size (45 min). Grease 2 loaf pans.
Punch down dough and divide in half. Flatten dough for each loaf into a rectangle with hands or rolling pin. Poll dough tightly starting from narrow end. Place dough seam side down in the pans. Brush lightly with melted butter and sprinkle 1/2 T flax on each. Let rise in 200 oven until doubled (30-35 min). Remove and preheat oven to 375. Bake in 375 oven for 40-45 min or until loaves are golden brown and hollow-sounding when tapped. Remove from pans and cool. Makes 2 loaves.
