Ingredients

1 green bell pepper
1 yellow or white bell pepper
1 large onion
1 zucchini
2 large tomatoes
1.5 cups shelled edamame
1 jar of Maya Kaimal Vindaloo Sauce
Olive Oil
Directions
Chop all of the vegetables.
If necessary, cook and shell the edamame.
Dump the vegetables into a crock pot or slow cooker.
Season with salt and pepper.
Evenly coat with 1T olive oil.
Add the Vindaloo sauce, mix to coat, and allow to simmer until vegetables are cooked (approximately 2 hours on high)
Consider serving over brown rice or quinoa (not included in calorie count)
