Ingredients

    3 Fillets of Pink Pacific Salmon (or 1 1/2 lbs)
    1 1/3 Cup Sun-dried Tomatoes in oil, slivered
    1 Tbsp Oil from Sun-dried Tomatoes
    2 Cloves of Garlic
    1 Cup of Sliced Mushrooms
    1/2 Bunch of Asparagus (approx. 10 spears), cut into 1" pieces
    1/2 Cup Sliced Green Onions
    1/4 Cup Chopped Parsley
    Pinch of Salt & Black Pepper flavoured to taste

Directions

Heat a large non-stick skillet over medium-high heat; add sun-dried tomatoes, oil and garlic, and saute for 1 minute. Add the mushrooms and asparagus and cook, stirring often, for 2-3 minutes. Add salmon and green onions; saute another 5-7 minutes. Stir in parsley and add salt and pepper to taste.
