Ingredients

1 Tbs Olive Oil
3 Cloves Garlic, chopped
1 large brown Onion, diced
1 kg minced beef
2 medium Carrots, diced
150 grams Zucchini, diced
Mushrooms, fresh, 1 cup, pieces or slices
Black Olives, 100 grams
2 cans Tinned Tomatoes - Ardmona, 820 gram(s)
Tomato Paste, 0.5 cup
Directions
Makes enough for 1 large lasagne (serving 10), or 8 serves of spaghetti bolognese
Heat the oil in a large stock pot. Add diced onion and garlic, and cook until onion is translucent.
Add mince meat and stir well. Cook on a medium heat until meat has browned. There will probably be some excess liquid in the pot. Don’t stress too much as this will evaporate and reduce during the cooking process.
Add diced carrot and cook on low for 5 minutes, stirring frequently. Add zucchini, mushroom and olives and continue to cook for 10 minutes, stirring frequently.
Add 2 tins of tomatoes and the tomato paste. Add 1 tin of water and stir well. Simmer for 20 minutes, stirring occasionally.
Once sauce has reduced down, add salt and pepper to taste and serve.
