Introduction
This recipe includes real pepperoni. I also fill the mushrooms with as much sauce as they can hold - just short of 1/4 cup each. This recipe includes real pepperoni. I also fill the mushrooms with as much sauce as they can hold - just short of 1/4 cup each.Number of Servings: 3
Ingredients

6 oz package of portobello mushroom caps (usually 2-3)
tomato sauce (no sugar, no salt added) - you can add your own spices like oregano, basil, garlic, red pepper flakes - to your liking. I put a little shake of each.
1/2 cup shredded cheese
pepperoni slices
Directions
350 degrees
Remove stems from mushrooms
wash and lightly spray mushrooms with olive oil and put in baking pan in oven until soft - 10-15 min.
There will be a lot of liquid in the pan. Your choice whether to dump it out or leave it. I like the extra flavor as it cooks down.
Once soft, remove the mushrooms from oven and top with sauce, cheese and pepperoni.
Pop back in the oven just until the cheese melts (5-10 min). If it's brown, you over cooked it. (although that extra liquid in the pan poured over the over-cooked pizza makes a nice variation - super messy but oh so good)
