Ingredients

1 can Enchilada Sauce
4 6" Corn Tortillas
1 bag Quorn Meatless Grounds
1 cup Reduced Fat Mexican Blend Cheese
1 can Fat Free Refried Beans
1/2 Onion, chopped
Directions
Makes 4 very large servings.
Heat the oven to 350 degrees.
Chop the onion.
In a large bowl add 1/2 the can of enchilada sauce to the Quorn grounds and onion. Mix well.
In a casserole dish, spray with cooking spray. Layer four of the tortillas in the bottom.
Spread the beans over the tortillas and top with the meat mixture.
Top with the remaining 4 corn tortillas and the rest of the enchilada sauce.
Sprinkle the top with the cheese.
Bake for 30 minutes, or until warmed through.
