Ingredients

    6 large eggs
    3 cups 1/2 & 1/2 (fat free)
    2 cups Colby low fat cheese (grated)
    Can of Spinich (Squeeze all water out)
    About 8 slices of crisply fried bacon
    grated onion as desired
    teaspoon salt
    teaspoon black pepper
    1/2 teaspoon nutmeg

Directions

Preheat oven to 325 degrees.

Combine all ingredients. Mix all together in large bowl.
Grease large size muffin tin.
Using a ladle, fill muffin cups 3/4 full.
Bake in over for 30 to 35 minutes until a toothpick comes out clean.
Let cool and serve with a fresh, green salad.

Makes about 12 muffin sized quiches to snack on.
