Introduction

Low cal, low fat, (relatively) low carb--but super yummy! Low cal, low fat, (relatively) low carb--but super yummy!
Number of Servings: 11

Ingredients

    -8 cups water
    -1/2 cup white rice
    -3/4 cup brown rice
    -1/4 cup quinoa
    -1/5 large red pepper
    -1 stalk celery
    -1 cup kale
    -2 carrots
    -1/2 cup cauliflower
    -3/4 cup broccoli
    -2 kielbasa sausages (jalapeno flavored if possible)
    -1 Tbs parsley
    -1 Tbs rosemary
    -2.5 Tbs McCormick's beef base

Directions

Pour water into a large pot. Heat on medium with brown rice, white rice, quinoa, and beef base.

If kielbasa is not already cooked, cook it. (This is an excellent use for leftover kielbasa!)

While the water heats and the grains cook, chop peppers, kale, carrots, cauliflower, and broccoli and slice celery. Add to pot with rosemary and parsley. Stir occasionally.

When veggies are nearly soft, add kielbasa. Let stew until veggies are soft and kielbasa is hot.

Makes about eleven one-cup servings.

Suggestion: If you have other vegetables, chop them up and add them to the mix! Jalapeno kielbasa has a great kick to it that is moderated when added to this soup. If jalapeno flavor is unavailable to you, try adding chopped up jalapeno. (If you don't like much heat, don't add all the seeds and you'll be fine.)
