Ingredients

6 large eggs
1/4 c. 1% milk
1/2 c. onion, chopped
2 garlic cloves, minced
1 zucchini, sliced
1 tsp. Italian seasoning
1/4 tsp. crushed red pepper flakes
1/4 lb. fresh mozzarella
1 large tomato
1/4c. grated parmesan cheese
2 Tbsp. fresh basil
Directions
Preheat oven to 350.
Beat milk and eggs together. Pour egg mixture into a 2 quart glass casserole dish sprayed with cooking spray.
Spray frying pan with cooking spray. Saute onion, garlic and zucchini until tender. Add stewed tomatoes, italian seasoning and crushed red pepper flakes. Bring to boil, then simmer for 5 minutes.
Pour tomato and zucchini mixture into egg mixture and stir. Place thinly sliced tomato and fresh mozzarella cheese on top of egg mixture. Sprinkle with parmesan cheese. Top with fresh basil.
Bake in preheated oven for 25 minutes or until set.
