Introduction

It is a very hearty stew, so use a small bowl. I did not make low cal tweaks to this recipe, just portion control. Use leaner meats and drain drippings for lower fat/calories.

I add potatoes into the stew so it is a one pot meal. Skip adding the potatoes and serve over noodles, if you prefer.

Ingredients

    * Beef chuck, arm pot roast, 2 lb
    * Lamb, Cubed, 0.5 lb (optional)
    * Bacon, 4 medium slices
    * Onions, raw, 0.5 large
    * Peppers, sweet, red, raw, sliced, 1 cup
    * Garlic, 3 clove
    * Paprika, 3 tbsp
    * *Caraway Seed, 1 tsp
    * Cider Vinegar, 1 tbsp
    * Red Wine, 1 fl oz
    * *Potato, raw, 1 large (3" to 4-1/4" dia.)
    Chicken stock, home-prepared, 2 cup
    *Grey Poupon Dijon Mustard, 1 tsp
    *Lea & Perrin's Worchestershire Sauce, 1 tsp

Directions

Dice onions and red pepper. Set aside. Dice potatoes and set aside in a separate bowl.

Cube pot roast. Lamb is optional - I had some leftover from a lamb roast so I added it to this recipe. Set aside.

Brown bacon in a large dutch oven over medium high heat. Cook until dark brown and crisp. Remove from pot and set aside.

Add cubed meat and brown on all sides. Remove from pot and set aside.

Add onion and bell pepper into pot and mix into the frond gravy in the pot from the meat. When hot and onions are soft, add bacon and beef back into the pot. Add the diced tomatoes, chicken stock, potatoes and all spices. Mix thoroughly.

Heat until bubbly. Reduce heat and simmer minimum 2 hours. It works well as a slow cooker recipe too, so simmer 4-8 hours on low if desired.
