Number of Servings: 3


    6 oz skinless chicken breast
    1 bag Steamfresh asian veggies
    1 bag Steamfresh veggies w/ water chestnuts
    1 Tbsp low-sodium soy sauce
    2 tsp oil
    1 tsp vinegar


    3 Tbsp brown rice
    1 tsp oil


Prepare rice with oil in a rice cooker. (For convenient use with later meals, you may want to cook 1/4c dry and then separate out a 3/4 of what comes out for use with this recipe.)

Microwave Steamfresh veggies. Trim chicken of visible fat and cut into thin strips or cubes. Add oil to a pan and barely brown chicken (make sure it's not pink). Add veggies, soy sauce, and vinegar to the pan, stir well, cover, and cook about 5-10 minutes or until chicken is absolutely done (but not dry/chewy).

Note to other SP members: I know this isn't authentically asian, but it's acceptable for the ease and speed in which it can be made. :)
