Introduction

Number of Servings: 8

Ingredients

    1/4 c. lite soy sauce
    1/4 c. regular soy sauce
    1/2 c. white wine
    2 tbs sugar
    1.5 tbs cornstarch
    2 tbs peanut oil
    8 oz can water chestnuts, drained (makes 5 oz)
    8 oz can bamboo shoots, drained (makes 5 oz)
    2 chicken breasts, cut into bite size chunks (16 oz total)
    3/4 lb. cooked ham, cut into thin strips (12 oz total)
    3 c. diagonal cut celery
    3 tbs green onions, chopped (scallions)
    3 c. broccoli

Directions

Combine in a small bowl - soy sauce, wine, sugar and cornstarch; mix thoroughly and set aside.

In a wok or large saute pan, pour 1 tbs oil and preheat for about 2 minute on med-high heat. Add chicken and stir fry for 4 - 5 minutes, until opaque. Push to outside of pan (or remove to a plate if not enough room). Add ham and stir-fry 2 - 3 minutes; again, push to outside or remove. Add 1 tbs oil and stir fry celery for 3 minutes; next, add broccoli and stir fry same (3 minutes). Add bamboo shoots and water chestnuts; stir fry another 3 minutes. Add green onions as well as ham and chicken (if you removed them earlier from the pan) and stir fry 1 minute. Add sauce and mix thoroughly until everything is well coated. Reduce to low simmer until sauce thickens.

Serve over brown rice if carbs are not a concern.

Makes approx. 8 - 8 oz. servings.
