Ingredients

    1 Package Brown Rice Pasta (454 g)
    1 Package Spinach (10 oz)
    1 Cup fat free italian dressing
    2 oz light feta cheese, crumbled
    1 lemon, juiced
    1 cup grape tomatoes
    4 cloves minced garlic
    1/4 tsp black pepper

Directions

Cook pasta according to package directions. Drain and rinse under cold water.

Whisk together italian dressing, feta, lemon juice, garlic, and pepper.

Toss together pasta, spinach, tomatoes and dressing. Refrigerate for 2 hours. Serve chilled.

Makes 8 - 1 cup servings.
