A delicious low-fat, low-sodium alternative to pizza. A delicious low-fat, low-sodium alternative to pizza.
Number of Servings: 2


    4 slices eggplant
    4 slices tomato, remove seeds
    1 clove minced garlic
    Olive oil cooking spray
    1/4 cup shredded mozzarella


Preheat oven to 425.
Lightly spray both sides of eggplant with olive oil cooking spray and sprinkle with Italian seasoning and place on baking sheet.
Bake about 5 minutes, turn over and bake another 5 minutes. (or until eggplant is slightly browned and soft)
Top each with slice of tomato, brush with minced garlic and divide the mozzarella cheese between the 4 pieces.
Bake until cheese is melted.

1 serving = 2 pieces
