Introduction

Since our garden is overflowing with the awesomeness of both heirloom tomatoes and cucumbers, I've been indulging in lunches like this: a simple yogurt, garlic and dill dressing enrobes canned tuna and the veggies on a big bed of lettuce. Throw in a pita and call it yummy! Ingredients

    1/3 cup non-fat plain Greek yogurt
    1/2 tsp grainy mustard
    1 clove garlic, minced
    1 tsp lemon juice
    fresh dill, to taste
    150g fresh tomatoes, chopped (about 2 "cocktail" sized ones)
    100g cucumber, diced
    1 medium slice red onion, diced
    80g canned chunk tuna (in water), drained and flaked
    1/2 head iceberg lettuce

Directions

In a medium bowl, whisk together yogurt, mustard, garlic, lemon juice and dill.
Add tomatoes, cucumber, onion and tuna and stir well to mix everything. Let stand 10 minutes for the flavours to blend.
Shred the lettuce into a large salad bowl, top with the yogurt mixture and enjoy!
