For the carrots, celery, and onion, I buy a ready made Mirapox from Raley's or Trader Joes (it cuts down on all the chopping!), I use jarred chopped garlic and cans of chicken broth(64oz), Italian diced tomatoes (2 cans) and a can of green beans. I buy 1 package of frozen broccoli and cauliflower mix and just throw it from the freezer to the pot. I love cabbage so I buy a fresh head, chop it up and throw it in.
Directions
Makes about 14 1-cup servings
In a large pot saute onions, celery, and carrot on medium-high heat until tender. Add garlic and cook for 1 minute longer.
Pour in about 1 inch of chicken broth, add cabbage and cover with lid. Once the cabbage is tender add the rest of the chicken broth, drained green beans, broccoli/cauliflower mix, and tomatoes (undrained). Bring to a boil, then lower heat and simmer for 45 minutes.
Season with whatever you like, I use garlic salt, Italian Seasoning, 2 bay leaves and sometimes a little bit of Old Bay.
You can also add 1/2 a small can of tomato paste to give it more of a tomato flavor. You can also add other veggies like corn. This recipe is very versatile!
