Ingredients

4 strips bacon, diced
2 tbsp water
1/2 large carrot, minced
1 medium red onion, diced
1 celery stalk, minced
3 sprigs thyme, de-stemmed
3 1/2 oz cranberries
1/2 cup red wine
1 cup beef stock
1/3 cup maple syrup
1 tsp lemon zest
1 tbsp olive oil
6 (5-oz) sirloin steaks, approx 1" thick
salt and pepper
Directions
In a large skillet, cook bacon and water until bacon renders its fat and crisps. Remove with a slotted spoon and set aside.
To the hot bacon fat, add carrot, onion, celery and thyme. Cook until vegetables begin to soften, then add cranberries, red wine, stock and maple syrup.
Cook, stirring often, for 7-8 minutes, then stir in the reserved bacon and lemon zest and remove from heat.
In another skillet, heat olive oil over medium-high.
Season steaks with salt and pepper and arrange in one layer in the hot skillet (you may need to do two batches).
Cook for 4 minutes per side, remove to serving plates and top with cranberry sauce. Serve with rice or mashed potatoes and roasted vegetables.
