Ingredients

    Crust:
    3/4 c finely crushed sugar free shortbread or vanilla waffer cookies
    1 c finely ground raw almonds
    1/3 c melted butter
    1/4 c Spenda
    1/2 tsp ground cinnamon

    Filling:
    4 pkg 8oz regular cream cheese
    1/2 c splenda
    1/3 c whipping cream
    6 lg eggs
    1/4 c fresh lime juice
    1/2 tsp grated lime peel

    Topping:
    1 c sour Cream
    1 tsp vanilla flavoring
    1 TBSP Splenda


    Makes 16 servings

Directions

Preheat oven to 350
Crust:
Mix crust ingredients and press into 10" pam sprayed spring-form cake pan. Bake @ 350 for 10 minutes. Allow to cool.

Filling:

Combine all filling ingredients and blend with electric mixer until smooth and fluffy. Pour over cooled crust.

Bake @ 300 for approx 60 min. Center should be only slightly soft.

Topping:

1 c sour cream
1 tsp. real vanilla flavoring
1 TBSP Spenda

Pour over baked cheese cake and return to oven for an additional 10 minutes.

Allow to cool and refrigerate until cold, 5 hrs or over night. Serve with fresh berries (NOT included in nutritional calculation)
