Ingredients

    2 c. Whole Wheat Flour
    2 c. flour
    3 c. natural bran
    2 tsp b powder
    2 tsp b soda
    2 tsp cinnamon
    1 tsp salt
    .5 tsp nutmeg
    1 c. packed b sugar
    .75 c margarine
    3 eggs
    14 oz unsweetened applesauce
    1.5 c low fat buttermilk
    .5 molasses
    1 c raisins
    1 apple chopped

Directions

Mix all dry. Mix all wet. Combine, do not overmix. Fold in apples and raisins. Makes 30 large muffins.

  • I would like to make this but I am not sure how much molassas to put in. Is it .5 TBSP? .5 cup? I will try it with 1/2 TBSP and see what happens. Cook at 350? How long? I will try it and see. - 6/23/10

    I thought this was a good recipe. I got away with using only one egg (all I had) and no molasses because I didn't have any. I added an extra apple and they are very good with a bit of cream cheese. I froze some for mornings I am in a hurry or want something sweet ... - 12/9/09
