Introduction

This is a variation on a recipe I've used for years. The nutritional values will show more fat and sodium than are actually in the dish as the bacon and beans are drained and rinsed. Number of Servings: 18

Ingredients

    2 1lb. cans of Campbell's Pork & Beans, drained & rinsed
    1/2 lb. Hickory Smoked Center Cut Bacon, cut in small chunks
    1 whole white onion, chopped
    1 c. Splenda Brown Sugar
    1 c. Heinz ketchup (can use low-sugar)
    1 tbsp. liquid smoke

Directions

In large pot (cast iron is best) cook bacon with onion until bacon is done, but not crispy and all water is cooked off. Place in colander with beans and rinse all well with warm water. Transfer all back to large pot and add remaining ingredients, mixing well. Either place uncovered in 150 degree oven or on stove over very low heat and bake/cook for 4-5 hours. Stir 2-3 times an hour if cooking on top of stove to prevent beans from sticking.

Makes approximately 18 1/2c. servings.
