Ingredients

    1 tbsp canola oil
    2 tsp green curry paste,
    2 chicken breast, no bone, no skin
    1 bag of stir fry vegetables
    8 oz goya coconut milk
    1 tbsp fish sauce
    1 tbsp lemon juice
    1 tbsp cilantro

    3 cups cooked brown rice, long grain

Directions

Heat the oil in a large skillet over high heat; heat the curry paste in the oil about 30 seconds. Add the chicken and cook another 3 minutes. Stir in the stir fry vegetables, coconut milk, fish sauce, and lemon juice; bring to a boil; cook until the chicken is cooked through, 5 to 7 minutes. Sprinkle cilantro over the dish; stir. Serve hot over the brown rice.
