Ingredients

    2 - 6 oz. pieces boneless, skinless chicken breast,2
    1 Tbsp. Plain Bread crumbs
    1 Tbsp. Parmesan Cheese, grated
    1/4 tsp. Dried oregano
    1/8 tsp. Garlic powder
    1/8 tsp. Pepper, black
    1/8 tsp. Onion powder
    1/8 tsp. Paprika
    2 tsp. Dijon Mustard

Directions

Heat oven to 425ºF. Spray 9-inch square pan with cooking spray. Remove fat from chicken. Pound out to even thickness.
In shallow dish, mix bread crumbs, cheese, oregano, garlic salt and pepper. Spread mustard on all sides of chicken. Coat chicken with bread crumb mixture. Place in pan.
Bake uncovered about 25 minutes or until juice of chicken is no longer pink when centers of thickest pieces are cut.

Serves 2 - 6 oz. a piece

    Incredible!
    Made tweaks before saw this recipe (tho mustard is really better than oil) but I *did* like my additions of a few veg: https://recipes.sparkpeople.com/recipe-det
    ail.asp?recipe=3614465 Would have added more in larger pan (sliced potatoes, crucifers, squash etc) if didn't have my pesto pasta pre-made.
