Ingredients
-
1 cup Panko Bread Crumbs
pepper to taste
1/2 cup yellow cornmeal
2 TBS minced dried onion
seasoning salt to taste
garlic powder to taste
5, 4oz tilapia fillets, sliced into strips
1 egg
1 cup lowfat buttermilk
Directions
Preheat oven to 375 degrees F.
-place sliced fish in buttermilk and soak for 20+ minutes in the fridge.
-combine cornmeal, seasoning salt, onion and garlic in dish
-combine breadcrumbs and pepper in a dish
-place fish in cornmeal mixture and roll to coat
- beat egg into buttermilk that remains after removing fish
-dip coated fish sticks into buttermilk/egg mixture
-roll in breadcrumbs pressing to make sure they are coated well.
-place on a wire rack as you finish each one
- spray a baking sheet with cooking spray and place the fish on the sheet in a single layer
-coat with additional cooking spray if desired
-bake at 375 for 30 minutes (or until desired doneness) turning once halfway through
