Ingredients

500g lean mince
2 cans chopped tomatoes
1/2 a handful of finely chopped fresh rosemary
1/2 a handful of finely chopped fresh thyme
2 medium onions / chopped
Heinz tomato ketchup - 1 tbsp
HP brown sauce - 1 tbsp
2 x chicken or veggie stock cubes
tomato puree
1 tbsp dried mixed herbs (herb provincale)
1/2 pint water (more if required)
Serve with a baked potato (140 cals for a medium sized potato), or a serving of linguine ( it tastes better than spaghetti)
Garnish as desired with:
20g Parmesan cheese (83 calories)
1/2 handful of Fresh chopped coriander
fresh ground salt and pepper to taste
Directions
Fry finely chopped onions together with all the mince until the mince is browne dthrough and the onions are soft and tender.
Add ketchup, brown sauce to mince and onions, then add to second pan.
Second pan - add chopped tomatoes, crumbled stock cubes, tomato puree, chopped rosemary/thyme, dried herbs and 1/2 pint water. Add salt/ pepper now or at the table.
Add mince and onions to second pan. Bring to boil and simmer for 20 -30 mins (to desired thickness of "soup")
Serve with linguineor baked potato... a grating of parmesan and a sprinkling of coriander as required.
