Introduction

Terrific side dish; serve with any type of meat. Very healthy and really filling but low calorie. Terrific side dish; serve with any type of meat. Very healthy and really filling but low calorie.
Number of Servings: 6

Ingredients

    Orzo, dry, 8 oz
    Zucchini, 1.5 cup, sliced
    Tomatoes, 1.5 cup halved cherry tomatoes
    Garlic, 3 cloves, chopped
    Shallots, 6 tbsp chopped
    Basil, fresh, 6 tbsp
    Pepper, red or cayenne, 1 tbsp
    Lemon Pepper Seasoning Blend, 1 tsp
    Olive Oil, 1 tbsp

Directions

Heat the olive oil in a large skillet over medium-high heat. Add the garlic, shallots, zucchini and tomato. Saute for 3 minutes. Stir in the dried red/hot pepper, and the lemon pepper blend. Add the basil and saute for 1 minute. Remove from the heat. Add in the four cups cooked hot orzo and toss well. If needed, salt to taste.
Makes (6) 1.25 cup servings.

    I had this for dinner, and it was really tasty. It went great with pork. I cooked the squash a little bit too long, so you have to make sure to use the times in the recipe so that squash is al dente. Thanks for sharing. - 9/18/10
