Introduction

This is a super easy rice recipe that goes great with any Mexican meal! Add chicken breast or ground turkey to make it a complete meal! This is a super easy rice recipe that goes great with any Mexican meal! Add chicken breast or ground turkey to make it a complete meal!

Ingredients

    1/2 medium onion, chopped
    1/2 medium bell pepper, chopped
    1 T olive oil
    1 1/2 C brown rice
    3 C low-sodium chicken broth or water
    1/4 t salt
    2 t garlic powder
    3 oz. tomato paste (1/2 a can)

Directions

Coat saucepan with olive oil and warm over medium heat. Saute onion and bell pepper until tender about 3 minutes. Add rice and toast for about 2 minutes stirring frequently. Add broth, tomato paste, salt and garlic powder. Turn heat to high and bring to a boil. Reduce heat, cover and allow rice to simmer for 45-60 minutes according to package directions. Fluff with fork and serve.
