Introduction

This is a delicious cashew dip. It actually reminds me of a non-fishy tuna substitute. It would be great stuffed into a tomato, or spread on crackers, or in celery sticks. Ingredients

    4 cups raw cashews, soaked in water for 2 hours and then drained
    1 1/4 cups water
    1 tsp sea salt
    1/2 tsp onion powder
    1 tsp garlic, minced
    1/2 red bell pepper, diced small
    2 green onions, sliced
    1/2 cup fresh basil, chopped fine

Directions

In a food processor, blend the cashews, water, and sea salt until completely smooth. Scrape into a bowl, then add the onion powder and garlic and mix well. Fold in the peppers, green onions, and basil.
