Ingredients

Filling:
1lb ground beef
1 small onion, chopped
1 cup carrots, chopped or diced (optional)
1/2 cup mushrooms, diced (optional)
1/2 cup red bell pepper, diced (optional)
1 cup diced tomatoes (optional)
1 jar (16 oz) Ortega Salsa (any flavor)
1/3 cup water
1 pkg. (1.25oz) Ortega Taco Seasoning Mix
1 cup frozen corn kernals
1 can (2.25 oz) diced ripe olives, drained (black)
Crust
1 cup yellow or white corn meal
1 can (12 fl oz) evaporated milk (fat free optional)
1 can (4 oz) Diced Green Chilies
1/3 cup shredded cheddar cheese
1 tsp salt
Directions
For Filling:
Cook beef, onion, carrots, mushrooms, bell pepper and tomatoes in large skillet until beef is browned; drain. Stir in salsa, water and seasoning mix; bring to a boil. Reduce heat to low; cook stirring occasionally, for 3 to 4 minutes. Add corn and olives.
For Crust:
Preheat oven to 425 F
Combine cornmeal, evaporated milk, chilies, cheese and salt in a medium saucepan. Cook over medium-high heat, stirring frequently for 5 to 7 minutes or until thickened.
Spoon filling into 12 x 8 inch ungreased baking dish. Spread cornmeal mixture on top.
Bake for 25 minutes. You can sprinkle cheese on top and bake for an additional 5 to 10 minutes or until cheese is melted.
