Ingredients

    1 block extra firm Tofu
    2 eggs
    1/4 c. 1/2 and 1/2
    2 cups cheese (any type)
    + 1/4 cup to sprinkle on top
    Salt
    Pepper
    Paprika
    Panko Bread crumbs mixed w/ 2TBSP melted butter for topping

Directions

Mash Tofu with fork. Mix together eggs, cheese, cream, salt, pepper and paprika. Add tofu, combine. Put into casserole and top with either Panko breadcrumbs and butter or reduce carbs further and top with cheese.
