Ingredients

    -I cup canned pumpkin
    -1/2 cup dark brown sugar
    -1/4 tsp. pumpkin pie spice
    1 cup chopped pecans (optional)
Puff pastry dough (frozen, can buy at any store where the frozen pies are)
    soy milk
    sugar

Directions

Preheat oven to 425 degrees. In large bowl combine the canned pumpkin, brown sugar, and pumpkin pie spice. After mixing, add the chopped pecans if you so choose. Mix that. Put the bowl to the side. Get out the frozen puff pastry dough (it's best if it has had time to defrost a bit) and cut into 9 even squares. Put some of the pumpkin mixture on top of one of the pastry squares. Use another pastry sheet to cover that and press down on the sides. Do this with the rest of the pastries. The 9nth one can be saved if you were to do a second batch or just half that one and make a mini pumpkin pastry. Put on greased baking pan, cute three holes with a knife on all of them, and lightly brush with soy milk and sprinkle with sugar. Put it in the oven for about 35 mins. or looks golden brown. Enjoy your Harry Potter festivities.
