Ingredients

    Chicken Breast
    Olive Oil
    Garlic
    Jalapenos
    Zucchini Squash
    Green Bell Peppers
    Red Bell Peppers
    Yellow Bell Peppers
    Red Curry Paste
    Light Coconut Milk
    Regular Coconut Milk
    Red Potatoes
    Fish Sauce
    Fresh Asian Basil

Directions

Makes 16 1/2 cup servings

Cut up and cook chicken breast and pressed garlic in olive oil until tender.
While chicken is cooking, prepare vegetables. Slice peppers into long thin strips, slice zucchini and jalapenos into thin slices and potatoes into bite sized pieces, leaving skin on.
After chicken is cooked, add curry paste and coconut milk and bring to a low simmer. Add vegetables and cook them until tender.
Add fish sauce and fresh basil just before serving.
Serve a 1/2 cup portion over brown steamed rice for a nutritious meal. Great as leftovers, too.
*If you don't like it spicy, don't add the jalapeno.
