Introduction
I can't remember where I'd originally found this recipe, but it's really delicious ! I use chicken sausage but any spicy sausage will work. Ingredients

* 1 lb pasta of choice (I like penne with this dish)
* Aidell's Andouille Chicken Sausage - 4 pieces (1 packet)
* 1 can cannellini beans
* 1 glass (3.5 oz) of white wine - any white wine will do :)
* 1 cup arugula or even spinach if you prefer
* 2 oz of crumbled goat cheese
Directions
1. Boil pasta in a big pot according to package instructions
2. While pasta is being cooked, cut up sausages into desired thickness and fry them (no need to add oil if you use a nonstick frying pan).
3. Add white wine to sausages and simmer for 3 minutes
4. Add arugula and cook for an additional 2 minutes
5. Add beans (along with the liquid in the can)
6. Simmer for 5-10 minutes. The sauce should thicken and the arugula should be wilted by now
7. Drain the pasta and put the pasta back into the pot.
8. Add the sausage , beans and arugula to the pasta.
9. Toss together to coat the pasta with the sauce
10. Sprinkle the goat cheese and toss again.
