Introduction

A delious soup that gives a spicy flavor but not a heat that burns.
An adaptation from a brown potato and peanut soup I had at a friends.

Number of Servings: 5

Ingredients

    3 small red potatoes or 1 1/2 large
    2/3 cup smart balance creamy peanut butter
    1/2 of a 7oz can san marcos chipotle salsa (sometimes
    labeled chipotle sauce)

    Beef broth -(optional) you can boil steak (we use flank steak) and potatoes and use beef broth with the peanut butter. Or for a vegetarian option cut the steak into strips and sautee seperately and leave on side for the omnivores in the family to add in later :)

    Optional:
    Blend peanut butter broth with yellow bell peppers
    Two sisters gourmet chili chipotle seasoning on top

Directions

Cut potatoes into bite size pieces (cut in half then cut in half again long ways to make it easier to cut). Boil. When cooked reduce to simmer and add chipotle sauce.

Slowly melt peanut butter at low heat in a sauce pan. When it is a creamy consistency add a 1 to 2 ladels of broth from boiled potatoes until it is a nice thick foggy broth.

Add peanut-broth mixture to potatoes (oil seperation form peanut butter is natural. just stir soup and it will all mix back together)

Serve with Chili chipotle seasoning.

Optioonal sides to add in: an egg in omelet, steak, chicken, pork, lettuce, lime, beans

Makes 5 cereal bowl serving sizes
