Introduction
OK. So I don't like salmon. Never actually had a steak of salmon until today. My only salmon experience before was from a can and I hated it! So Since I am trying hard to turn over a new leaf, my husband bought salmon Steaks with the promise they would taste better than canned Salmon. Boy was he right! I wanted to make the marinade to my tastes as I was the one that didn't like the darn fish to begin with. This is the recipe I came up with. It turned out so incredible I just had to share! Salmon.... who knew?????!!! OK. So I don't like salmon. Never actually had a steak of salmon until today. My only salmon experience before was from a can and I hated it! Ingredients

2 TBSP I can't believe it's not butter light (Melted - 15 seconds in microwave)
2 Tbsp (heaping) loosely packed brown sugar
1 oz Yukon Jack Liqueur (this is a Canadian liqueur which is Whiskey and honey - sweet) Brandy would also work
2 tsp lemon zest
1 tsp dried thyme
.5 tsp freshly cracked black pepper
3- 4 oz salmon steaks (skin removed)
Directions
Fist melt the margarine in the microwave for 15 seconds. Add to the melted margarine the brown sugar and mix well to liquefy the sugar. Set aside for a moment
In a shallow dish pour 1 oz of Yukon Jack (or choice of brandy) Add the 2 tsp of lemon zest and the thyme and black pepper. Stir all these ingredients together.
Add the margarine/ brown sugar mixture to the shallow dish ingredients.
Place your salmon steaks in the marinade for a minimum of 15 minutes.
I used my george foreman griller to make mine but if you have a grill or BBQ you can also do them on there. On the george foreman I placed the marinated salmon and closed the lid for about 4 minutes. I then opened the lid and continued to cook the salmon for another 2 - 3 minutes. During this time I used the marinade in the dish to brush the salmon twice. Remove from grill and let stand for 5 minutes before cutting into fish.
I served this with sautęd red peppers and a vegetarian Chop Suey! (bean sprouts, celery onions, carrots)
It was amazing and super fast!!!
