    1 small eggplant, sliced
    1 large zuchinni squash, sliced
    1 large yellow squash, sliced
    1 large onion, sliced
    1 pkg of mushrooms, sliced
    About 1lb of lean beef flank steak
    2 tbl Olive Oil
    5 tbl Lite Soy Sauce
    Seasoning to taste
    3 cups Brown rice, cooked


Slice beef and cook in olive oil.
Slice veggies and add once beef is mostly done along with soy sauce. Simmer until veggies desired consistancy. Serve over rice.
